Kitchen memories



I do not consider myself a great cook.

I do not consider myself a bad cook.

I just consider myself... a cook. I have failures and successes. My family still wants me to feed them at least 3x's a day, so I must be doing something right.

But I do have a wee bit of a cookbook obsession. I don't know what it is about them, but I really do love them.

I love recipes. I love the stories behind them. So because of that, these are 4 of my favorites.

My Kennedy family cookbook where I share a recipe (I was a teenager) that I copied out of one of my Moms cookbooks, lol. But there are others that I have made time and time again. Recipes from aunts, cousins, friends, my Mom and my Grandma. I love seeing the "submitted by" names next to the recipes.


The next is a recent one. A gift from my Mom at Christmas time. While I love the recipes recorded...I think I love the history more! Reading about my parents & grandparents. Reading about their lives leaves me smiling. Knowing them just a little better. My Mom was careful to, as much as possible, include the original copy of the recipe. With the smudges and tears. That is my favorite part. They are real.


For my wedding, I was given a crockpot. I took it from home to home. But I never knew what or how to use it. During one of my weekly chats with my sister Susan, I mentioned this to her. She gave me my "Fix it and Forget it" cookbook and I still use it constantly!

Last but not least, is my Seabee cookbook. I actually have more than one. Once again, it is not about the recipes, but the names that I see. Memories of times spent with friends.



I started a binder for recipes that I have printed or torn out of magazines. I love this recipe for banana cookies, but I also love the fact that, Ethan found it, printed it and that his messy handwriting wrote the title. It too is covered in smudges.



So I guess maybe it isn't the cookbooks that I love. Maybe it is the stories...and the people behind them. A legacy of love handed down from generation to generation.

Here is a random list of what's going on in the Turner home...

**Connor lost his other top tooth! Too bad the tooth fairy forgot! I told him the tooth fairy was confused because Connor lost his tooth on Wed but it was on Guam. In the states it is still Wed. So I am sure she will be coming tonight!!

**Harmony is having a blast at camp! She has made lots of friends, is Liesel in the Sound of Music, wrote a script for a skit they are doing, and is having a fabulous time. I am so happy to see her come out of her shell! It just makes my heart happy.

** The boys have named our house/van etc as the "boys club"!

**They are also pretending to be characters on movies and tv shows. In the car, they were watching Tom & Jerry. So they "called" the character that they want to be. It is cute but annoying when they fight over who gets what character.

** A long time ago, I participated in a lot of homemaking meme's. I kept putting them on this blog but I didn't want my followers to have to read them if they didn't want too. I created another blog as a place to put them. Well after I got preggo, I stopped updating it! Too much work. Now that I am back in the swing of things, I have started updating again. **Mason does what Mason does best. Eats, sleeps, poops. But oh how cute is that little boy! The kids and I can't keep our hands off! :)

**Oh and the bugs are gnats. They are attracted to water and light. So with it being the rainy season here, we just have to wait it out. The pest control guy told me that we don't have as much as other people. Gross. So I just get to sweep up bugs 10 times a day. OH joy!

Help wanted...the lunchbox dilema

This morning I got up to make the kids lunches. And in went the same old, same old! Juice, pretzels, sandwich, orange slices and a fruit snack. Basically this is the same every day. Maybe it is grapes instead of oranges, or a different kind of cracker instead of pretzels. But here is my problem...

1)The kids get so tired of sandwiches. Really I can get away with one a week. Tops. Otherwise they just keep bringing them home...UNEATEN.

2)They have no way of heating anything up. So if I sent them with dinner leftovers, they have to eat it cold.

3)I feel like I spend half my grocery budget on lunch items (juice boxes, fruit snacks, granola bars etc)

4)School lunches are out of the question. They are 3.25 per kid, per day. I could go to McDonalds and get them food off the dollar menu and pay less than the 9.75 it would cost per day!

So I am asking ( this was also my facebook status!) WHAT DO YOU PUT IN YOUR KIDS LUNCHES? I am making a running list, so help a girl out, would yah? :)

just so you know

It is 1:11 in the afternoon and I have

**dinner rolls rising on the counter

**pulled bbq chicken in the crockpot ( this is just for me. I had leftover chicken and wanted to use it up. Ben is not the biggest fan of it so I will just munch on it and put leftovers in the freezer.

**a meatloaf all prepared and sitting in the fridge waiting to be cooked

Not to mention that the dishwasher, washer,and dryer are all going. Plus I am looking up a Paula Deen recipe to make as a treat for dinner. Although Ivan just told me, " I just don't like treats". So far, I am doing pretty well! I think it's time for a little nap! :)

Shoulda Woulda Coulda


I am lacking in motivation lately. Seriously. I am going to say something ***knock on wood*** I do not want to jinx this but I have not been sick for almost a week now! Wahoo! I don't know whether it is a mix of being further along, unisom at night, little meals through out the day, fire balls, whatever it is, I am doing very well. Now I am just still dealing with the being tired part. I swear I can't find any motivation to clean house...and you can tell! :) I really did not do much today,and I just keep thinking of all those things "I should have done". Oh well. Instead I thought I would share this little funny thing that Connor did. He had to write sentences using his sight words. So one of the words was "an". His sentence?

"An I don't want that thang." I totally cracked up. Made him change it, of course. But it was too cute!

still alive

Wow, I can't believe I haven't blogged since Saturday. Wowsa. The fact is, there really isn't that much going on. Starting tomorrow however we will begin a very long weekend. Choir practice, a sleepover, babysitting, dinner with friends, trick or treating, Craft fair....whew. But right now the most exciting thing is that Ivan is almost done being potty trained! I never thought it would happen. And today I sent him off to school in underwear!!! Oh it is exciting times at the Turner home. Add in the fact that I cleaned out the closet under our stairs and you know that we have had an exciting week.

I do have a question for everyone. Not being on the mainland, I don't feel the crunch of the problems with our economy. I think it is different for us military folk. Living in housing we don't pay rent or utilities. However, our food budget is getting scary. How is everyone saving money these days? Or are you? I need some tips to start cutting costs. I have a lot of books on thrift but...just wondering about suggestions from people I know.

the most important meal of the day

I admit, I am really bad about making breakfast for the kids. Usually it is cold cereal or breakfast cookies ( made by Quaker, not me). I actually do not have very many breakfast ideas/recipes. I know that it is important for me to send them off with nice full bellies though. This morning I got up and made them breakfast. And I was shocked at how much they ate! Here are the details of what it takes to feed the Turner 4:

1 dozen eggs ( Harmony was bummed that there were not enough for seconds)
3 slices of ham cut into the eggs
1 whole bag of Thomas English muffins ( with butter & honey)
1 entire can of oj

And that is just for 4 kids! Please pray for a Costco/BJ's/Sams Club to come to Guam!

freezer cooking tips

Although technically this should be a post for my home blog, that one hasn't been updated in FOREVER. I really should get on that...But anyway, I still haven't got around to getting an email out to people. So I just wanted to share a few things that I have been doing, and share some tips I have learned along the way. I have yet to do just one big cooking day, but have just been doing little bits and pieces at a time. This post will probably be long and wordy so if you start to fall asleep, I won't be offended. I promise. Ok here goes...

**First of all...recipes. I remember talking to my sister about recipes one time. We were both saying we like the Taste of Home magazines because they are recipes from "real people." You know, the kind with ingredients that you have actually heard of. One day I was at the commissary and this lady and her husband were trying to find some seasoning. They were totally irritated and the man finally said, " where did you even hear of this?" And with a very exasperated sigh she said, "from a Rachel Ray Everyday magazine!" The guy said screw it then and walked off. Long story short, the reason that I love the sites under the title " Hungry..." (on my side above the birthday thing)are because they are made by real people. When they post a recipe, I usually have every single ingredient. Or only missing one or two. Plus they are simple but delish. So if you are looking for new recipes and new things to try, check those sites out. I am going to add one more too that I recently found and love.

**Moving on...When I make a recipe, I have been trying to double it. For example if I am making my beef enchilada recipe that calls for 1 lb. of hamburger, I usually make it with 2 or more. It also calls for one can of enchilada sauce. So when I am shopping, I will make sure to get at least two. Serve the first dish to your family and than freeze the other one. What I like to do for that, which I find not as messy, is to line the dish with foil. Leaving extra on the sides. Then when it is done, you can easily lift it out and wrap it up. I wrap in aluminum foil and than put in a plastic bag with all the air sucked out.

**When doing desserts, if it is a bar or brownie, I do the same thing with the foil. If they are cookies, I at least double the recipe. I usually leave 1.5 dozen in the cookie jar and the rest get frozen. Or I will double wrap a ball of dough ( like if I get tired of making the cookies)and put that in the freezer for a later day.

** I took Mary's advice and have been buying whole chickens instead of pkgs of breasts. We don't have fresh chicken here, everything is frozen so I figure I have to thaw it out anyway, might as well be a whole chicken. If you have never cooked a whole chicken...it is very simple. I like to prepare 2 and put them side by side in my roaster pan. All I put on is butter and salt, because we don't eat the skin anyway. Then I take cheap ziploc/Glad containers and put it in individual portions. That way if I want to make a recipe I can just pull it out and warm it up.

**With hamburger, I try to at the least 2 lbs. Cook until no longer red. Drain the grease and than bag it. That way it is easily used for tacos or casseroles etc. I know some people flash freeze it but I never have and have had no problems. Maybe it's a personal preferance?!

**I used to have the big foodsaver but ruined it somehow. So when I decided to do this again, Ben was a little hesitant to buy me a new one! lol Instead I bought the little $10 one from Reynolds. It has worked great for me. I am a little worried though because I haven't seen the bags around here anymore. Maybe if I look out in town. Amazon also sells them. But I will put cookies in those bags ( or other things that I just need a single portion of. Works great. And I think it is nice to use that first before investing in something bigger.

**I get so tired of making sandwiches once the school year begins. 3 sandwiches a day times 5 days a week...you do the math. It's a lot of bread. So I look through the freezer section and try to look at things that can be made and than frozen. For example I make my own bagel bite pizzas. Take a pkg of mini bagels, put sauce and toppings on, bake at 350 for about 10 minutes. Once they are cooled I put two together ( sandwich like) and wrap them together in plastic wrap. Do it 2 at a time. Then put all your little individual ones in a big bag and suck the air out. I freeze them like this because I don't want to have 24 bagel pizzas all stuck together. Does that make sense? Ben likes the Jimmy Dean breakfast sandwiches. So I bought English muffins, round sausages(you can also use ham/canadian bacon) and cheese. No eggs because I don't know how well that would work. Cook those and than wrap them individually. Other things to try...cressant dogs. I also will make the kids quesadillas or chicken nuggets.


**We are really bad about eating leftovers. It's like they go to our fridge to become a science experiment. So instead I will put it in a cheap container and than put it right into the freezer. Unless I am 100% sure that it will be eaten the next day. That way I can just grab it out of the freezer and send it with Ben to work on days he doesn't eat out.

** Last but not least...LABEL,LABEL,LABEL. You may think you know what it is,but once it is foiled wrapped and is sitting in the freezer, it may not be as easy to recognize. Plus you will want to put the date on. First in, first out.

I have barely begun doing this and with school starting I got a little behind. Now with Ivan in school more I am going to be trying to get it going again. If you have any questions feel free to ask, but I am not an expert! :)

freezer cooking update

Thanks for everyone's ideas and tips! Since school is still a little over a week away, I have been trying to get a ton of stuff in the freezer. Harmony is loving it too and has been helping me do a lot of baking. While the baking is fun, I would rather have the main dishes. Know what I mean?

So I have a couple of pans of enchiladas, southwest crockpot stew, 1 portion containers of chicken (great idea Mary! I went out and bought 2 right away!)cookies, muffins. See what I mean about the main dishes?

I have alot more to do but I am having a lot of fun with it.

I know I have a lot more to do to get ready for the school year but am on my way. Wish me luck!

homemakin'

A long time ago, I went to a homemaking meeting ( back when it was still called that)and one of the topics was freezer cooking. I wasn't sure exactly what they were talking about but I was totally interested in it. Once the girl started I was sold. I was already to implement this new way of cooking into my life. If you have never heard of freezer cooking, it just means making double or triple of a recipe and freezing them, to pull it out later. Some do it all on one day, some do one day of main dishes and another day of say cookies or breads. It sounded right up my alley...except for one small thing. Or a couple...
1) we were poor starving college students, we could barely afford rent let alone a membership to Costco

2) Ben was gone at school a lot

3) We only had Harmony...and she wasn't even eating baby food yet.

So I decided not to do it. The kids didn't really start eating all that much until we were living in Norfolk. I didn't do it then either because they had double coupon stores and my freezer and pantry were constantly stocked. (Those were the good ol' days huh Angie?)

Now being over here, my kids are really starting to eat. A bowl of cereal for breakfast is just not going to cut it. They are constantly eating. Plus, our lives are a lot crazier. With Girl Scouts, church callings/functions, wardroom functions, birthdays, and everything else that we are bombarded with. So I decided that now is the time.

I made what I thought was an enormous meatloaf, only to have the kids completely chow it down. There went my plan to put half in the freezer. However today I am on a roll. 2 pans of banana bars, one loaf of banana bread, white choc. chip macadamian nut cookie dough. Go me!!

Does anyone else do this? If you have any suggestions I would love to hear them! All I know is what I have been reading.

Home


Today has been a little emotional for me. I am so anxious for Ben to come home (bright and early in the morning). But while I am here, my heart is at home. At my parents house. With my brothers, sisters, nieces, nephews and everyone else who has gathered. Yep, a family reunion without me. I wish I would have been able to go. But things didn't work out the way that I expected.

I started thinking about, what home is. There is a saying that goes, "home is where the Navy sends you". And although they are talking about your station...I think there may be a little bit more meaning to it. Let me take you back to the year 2002...

I was sitting in my parents basement watching JAG ( it was the one when Bud lost his leg) and I got a phone call from Ben. "Well Marie, I have good news and I have bad news. The good news is that I got my orders. The bad is that we are not going to any of the places we picked. They are sending us to Norfolk."

I was kind of in shock. But I told him that as long as we were together, any place was home.

So we moved to Norfolk. We made new friends. We found new schools. We found new stores to go too. We found a new ward. We started all over again. And then in what seems like the blink of an eye, 4 years had passed. Our time was up and it was time to move on. We were anxious to go somewhere new, but part of our hearts stayed in Norfolk.

We moved here to Guam. We made new friends. We found new schools. We found new stores to go too. We found a new branch. And now a year has flown by. We have said some goodbyes ( miss you Tiff),we have had new experiences, we have lived our life.

While Ben was in Afghanistan, I got one call from a member of his wardroom, asking if I needed anything. Just one. This time,Ben has been gone for a little over a month. I have had 4-5 phone calls, countless emails, my neighbor has stepped up numerous times to help me. Our branch at church, has totally stepped in and supported me. It has been amazing.

I don't have family here. But in a way...it feels like I do. So am I home? Is Guam home? My kids consider Norfolk to be home. I consider White Salmon to be home. And Ben...The Dalles.

I don't know where I am going with all this. I have just been thinking about home and family. And I think whoever said, " Home is where your heart is" was right. So part of my heart is in White Salmon and part is here on Guam.

So while everyone is having fun laughing, talking,eating, teasing Darla, playing with kids, having a talent show, working on crafts and all that...don't forget about the Turner family. We miss you all and can't wait until we can see you again!

going green

I am not an enviromentalist. Honestly I had trouble remembering how to spell it. I am not a tree hugger or a granola person. However lately I have been seriously annoyed by something. Ok a few things.

1) There is no recycling on Guam. There is no truck that comes and picks it up. You can drive your recycling down to the NEX, but that is not everything. I may be wrong but I believe it is just aluminum cans.

2)Because of #1, my trash can is constantly overflowing. For example say I buy a box of fruit roll ups. They come in a box ( which I would normally recycle) then they each come in their own individual wrapper and then inside is the paper that it is rolled on. There are 8 in the pkg. so that means 2 for each of my kids. By the time that is gone, a 1/4 of my trash can is filled. But that is just one example. So many of the things my kids eat are individually wrapped. And I am starting to get frustrated by it.

3) Yesterday I went to the commissary for very few items. Literally, hardly anything. But I swear I got 50 plastic bags! I bought a refill pkg.of baby wipes...own bag. And the sad one? A double bagged box of crystal light on the go packs. This is not a joke. Those little teeny tiny boxes...2 bags!! You have got to be kidding me!

4) And I will end here...I promise. Water bottles. We are better about drinking water when it comes from a water bottle. I don't know why. Convenience maybe? Whatever the reason we are much better about it. our kids love the little kids sized ones and down them in a second. 1/2 of my trash bags are filled with water bottles.

So I have decided to go green. Here is what my goals are...

**not be as nice about bags at the commissary. Use tote bags ( when I remember) and use paper. No more plastic. Seriously. I have enough here to line my bathroom garbage cans for the next millenium.

**no more water bottles. Refill the many nalgene water bottles and bottles that the kids have. Do it every night, with a Brita filter ( the water here is TERRIBLE). That way it is cold, convenient and not filling my trash can.

** not using as many plastic baggies in the kids lunches. I realize that many frugal people wash plastic baggies. To me, I would just rather use containers. I am going to start making my kids take leftovers more often, so hopefully that will limit my use.

** frugal and environmental...stop using so many prepackaged foods. Last night the boys wanted kids cusines. So that would be 4 boxes x's any other packages that were in there. I decided to buy one box of corndogs, which are now sitting in their resealable bag in the freezer. The kids are going to have to tough this one out. As will I ( making a full pitcher of crystal light instead of a waterbottle full)


That is all I can think of for now. Anybody else going green? Have any ideas/suggestions. I think this helps me with my want of organization, keeping my house clean and helping with the whole budget thing.

hello 2008!

Ahhh...a new year means new resolutions. I love making goals for myself. I like this time of year ( along with September) to kind of re-evaluate and look and what I would like to change in my life.

I had spent New Years Eve, trying to get the house "perfect" so that I wouldn't start the new year off on a bad foot. Well perfection always seems to allude me when it comes to cleaning! Oh well. It still looks good! On New years I had written out a routine that I wanted to follow. A morning, afternoon and evening one. I did do my morning routine and then...

I have been suffering from some serious allergies here. I constantly have red itchy eyes, a sore throat, a stuffed up nose etc. It has been pretty miserable so I took some allergy medication. However, it may cause drowsiness! And holy cow were they right. After we returned from the beach, I went and took a nap. And didn't wake up until 3.5 hours later. Then I stayed up later because I had slept for so long, and then couldn't sleep all night because I wasn't tired. So once again, I am all thrown off!

Anyway, I am not just throwing in the towel on my resolutions. I guess I will just have to start my morning routine a little later!

I found a great site and there is a challenge for doing one small thing every day. So I have joined in. I like to do all these challenges so I can get little things done here and there. I know the next few months are going to be BUSY. But I look forward to getting little things done.
